Greek apple cake (Milopita)

Today I come with a different kind of apple cake, a very fragrant and easy to make cake.

  • 3 apples
  • 4 eggs
  • 80 g soft butter
  • 50 faina
  • 180 g sugar
  • 100 ml of olive oil
  • 1 baking powder
  • vanilla essence
  • grated peel of 1 lemon
  • 2 tablespoons raisins
  • 2 tablespoons coarsely chopped walnut kernels
  • 3 tablespoons conical
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves

Preparation time: less than 60 minutes

RECIPE PREPARATION Greek apple cake (Milopita):

To start, soak the raisins in the 3 tablespoons of brandy.

Mix the yolks with the sugar until they turn white. Add soft butter and vanilla and mix until incorporated.

Then add the oil slowly, like mayonnaise and mix well. Mix the flour with the baking powder, cinnamon and cloves and incorporate them in the egg cream and butter.

Beat the egg whites with a pinch of salt and then lightly incorporate it into the dough.

Peel the apples and cut them into cubes. Add the chopped apples, walnut kernels, raisins (including brandy) and lemon peel and mix gently until incorporated.

Pour the composition into a round tray (26 cm) greased with butter. Level and put in the oven at the right heat, until it browns slightly on top and passes the toothpick test.

Let it cool a bit in the pan then take the cake out on a plate and let it cool. Powder with sugar and portion.

French apple cake

In the bowl of the mixer we put the soft butter, the powdered sugar, the salt, the vanilla and we mix them until we obtain a foam. I added one by one the 3 eggs and grated peel from an orange. I mixed well after each egg added. Finally, sift the flour together with the baking powder and incorporate them at low speed with the mixer.

Add 175 ml of cold milk and a good spoonful of cognac. The alcohol will evaporate when baked and will help loosen the dough. I left the dough in the bowl for a few minutes, until I took care of the apples.

I set the oven to 170 C (average for gas). I washed the apples and sliced ‚Äč‚Äčthem. Then we put them in a bowl and sprinkled them well with the squeezed orange juice whose peel I scraped for the dough.

I chose a round tray with a diameter of 26 cm and I lined it at the bottom with baking paper. I greased it well with soft oil on both its sides and the bottom and I covered it with a little breadcrumbs.

I transferred the dough to the tray and leveled it lightly with a spatula, trying to lift it a little at the edges like a border. I baked the tray for 15 minutes at 170 C (preheated oven).

While the top is in the oven, we take care of the cream.

Mix the sour cream with the powdered sugar, a little salt, 2 whole eggs and vanilla. I got a fluid sauce. When the top is partially baked, respectively it has swelled well in the middle and already has a golden tint, we start to put the apple slices in a strainer (we kept the drained orange juice) and we created a crown-border over the dough with a few among them. I poured 1/2 of the sour cream over the dough. On top I put the rest of the apple slices (in fans) and then I poured the rest of the cream.

I also arranged the apple slices that moved when I poured the cream and that's about it!

I put the cake back in the hot oven (it was set at 170 C) and I baked it for 45-50 minutes. It should ripen well and turn golden, with slightly browned edges. The sour cream should bind like a pudding.

I let the cake cool in the form. When it cooled completely, I placed it on a plate and detached the side circle (after walking the blade of a knife around the cake). I powdered the cake with a little powdered sugar.

100g large crushed walnuts
400g crushed walnuts
400g wholemeal flour
400g old
125g butter
8 eggs
2 tablespoons baking powder
2 tablespoons cinnamon powder
4 tablespoons quality cognac
1 tablespoon orange peel

For the syrup:
320g brown sugar
400 ml water

Method of preparation:

In a bowl, using a mixer, mix well all the butter, sugar, cinnamon and egg yolks. Also with the mixer, in another bowl, beat the egg whites until the mixture hardens. Then add half of the meringue formed over the cream with the yolks.

The next step is to incorporate the baking powder, the 400g of ground walnuts and, gradually, the flour. Add this mix over the yolk paste, then top with the remaining half of the egg white foam. Mix gently.

Transfer everything to a tray that you covered with butter beforehand, and sprinkle large pieces of walnuts on top.

Leave the cake in the oven heated to 180 C for 45 minutes. Meanwhile, in a stainless steel container, put the sugar and water on the fire and let the mixture boil for 15 minutes.

Greek apple cake

Method of preparation:

Mix the yolks, sugar, butter and flavors (vanilla, lemon peel, cinnamon).

Then add the flour, baking powder, milk and mix.

Separately beat the egg whites with a pinch of salt.

Then incorporate the egg white foam into the dough with a spatula.

Peel the apples and cut them into cubes. We grind the walnut kernel with a knife and incorporate the apples, walnuts and raisins with the cognac in the dough.

Pour the mixture into a pan or saucepan greased with butter and lined with flour and bake in the oven over medium heat (180 & # 176C) for 1 hour. You can use a removable wall tray if you have one.

I was testing the cake with a toothpick and if it comes out clean then it's ready.

Let it cool for 5-10 minutes before removing it from the pan and serve after it has cooled completely.

It is absolutely delicious and is served with a globe of ice cream next to it or with a slice of cream. You can even decorate the cake with cream and serve it as a birthday cake, it's very good.

Apple and cardamom cake

It is my favorite cake. The apple cake, when I don't have enough time to make the crumbly top, I make this version just as good, the difference would be that in this version the top is fluffier.

1-1.5 kg apples (depending on how much filling you want between the sheets)

I peeled the apples, put them on the large grater and then put them in a pan in which I heated the butter, over the apples I then put the sugar, cinnamon and seeds from the cardamom pods (which I have crushed a little in the mortar). I left the apples on the fire until they softened, then I set them aside to cool well.

I separated the egg whites from the yolks, beat them hard with a pinch of salt, then after the egg whites were beaten very well, I added the sugar and beat until the sugar melted.

I mixed the yolks well with the oil, then I poured them over the egg whites, then I added the flour mixed with the baking powder and I mixed lightly so as not to spoil the egg whites.
I separated the composition into 2 equal parts, put one part in the tray with baking paper and put it in the oven for about 15-20 minutes until it passed the toothpick test.

I then took the tray out of the oven, added the apple filling, the rest of the dough over the baking sheet and put it back in the oven for another 15-20 minutes until the cake was completely baked.

After the cake was ready and I took it out of the oven I covered it with powdered sugar.

Fruit and meringue cake

Because we really like this cake with soft meringue, I make it whenever I have the opportunity, with various fruits and flavors because it always comes out very tasty.

Today, if I still made semifredo and I was left with 8 egg whites, I thought of using them for this Fruit and meringue cake, especially since I hadn't made such a cake for a long time.

200 gr frozen berries

Top: I separated the yolks from the egg whites, I beat the yolk well with the sugar and the essence, until it doubled in volume, I then added the oil, flour and baking powder, I mixed well and I left the dough aside.

I whipped the egg whites and then mixed them with the yolk dough, I put everything in a tray lined with baking paper and I baked for 15 minutes until the dough was almost baked.

I put the fruits in a saucepan on the fire together with the cardamom seeds and the sugar and I let them boil until they softened, I then added the raisins, coconut, I left for another 2-3 minutes then I take the pan to cool.

The egg whites for the meringue, I beat them hard with a pinch of salt, I then added the sugar and I continued to beat them until the sugar melted.

After the top was almost baked, I took the tray out of the oven, put the fruit over the top and then the meringue and put it back in the oven until the meringue was nicely browned.

We clean the apples, peel them and cut them into 4. We add water & tailcoat12 of their weight. Add 2 cinnamon sticks, 300 gr caster sugar and 2 tablespoons cinnamon. Let it boil until the sauce binds.

Dough: In a bowl put 2 eggs and beat well, add 100 g of melted butter and 50 g of melted margarine, 50ml liquid cream, 100 g of sugar and 1 vanilla stick. Slowly add the flour until the dough is done and leave it in the fridge for 15 minutes. Then take it out and put it on the tray, add the apples and cover with the rest of the dough. Grease with eggs and butter with a brush. Put in the oven for 40 minutes at a temperature of 180 degrees C.

Sos mascarpone: Mix mascarpone with 50 ml liquid cream, 100 g of sugar and 1 vanilla stick and put in the fridge.

Cut the apples into thin slices and caramelize them with sugar.

  • 250 gr. - natural yogurt
  • 200 gr. - sugar
  • 300 gr. - flour
  • 100 gr. - butter (at room temperature)
  • 3 large chicken eggs
  • 600 gr. - apples (peeled and inside)
  • 1 medium-sized apple
  • 1 sachet & # 8211 baking powder (10 gr.)
  • 1 teaspoon - vanilla essence
  • 1 tbsp - almond flakes (or any type of duke)

For decoration:

Preparation time: 15 minutes

Cooking time: 55 minutes

Total time: 65 minutes

  1. Preheat the oven to 170 degrees C.
  2. Mix the butter together with the sugar in a large bowl until they are well incorporated. Add the eggs one by one, then continue to mix for about 3-4 minutes until the texture becomes fluffy and will increase in size.
  3. Pour the vanilla and yogurt, mix with a spatula.
  4. Sift the flour together with the baking powder over the liquid ingredients.
  5. Then mix everything until all the ingredients are incorporated (it is important not to mix the dough too much after it has been incorporated, because it will not come out so fluffy).
  6. Cut the apples into cubes and put them in the dough, mix them until they combine with the dough.
  7. Grease a round baking tray with butter. Then pour the apple composition into it and level it nicely. Arrange a few slices of apples on top in a circle, then sprinkle on the entire surface of the almond flake.
  8. Put the tray in the oven for 45-55 minutes or until it is nicely browned on top.
