Potatoes can be cooked in so many ways that I can never get bored of them.
This variant is one that I have known since childhood, my father used to make it very often for family dinners. And I was there around him to help him :).
We used to call them potatoes with eggs, so that's what I called the recipe.

For baked potatoes with eggs we need:
& # 8211 12-13 smaller potatoes
& # 8211 4 eggs
& # 8211 1 teaspoon sea salt
& # 8211 1/4 teaspoon black pepper
& # 8211 1/2 teaspoon cayenne pepper
& # 8211 1 teaspoon garlic powder
& # 8211 1 teaspoon dried parsley
& # 8211 2 tablespoons butter to grease the pan

Preparation Baked potatoes with eggs
Wash the potatoes well and boil them with the peel in salted water. We check with a fork if they are cooked (they do not have to be super cooked and very soft).
Drain the water and let it cool a little so that we can hold it in our hands to clean it. After cleaning them, we put them through the large grater.
Break the eggs in a bowl and mix well with a fork and add all the spices.

I didn't save on the sheep's milk and I put 5 eggs and 8 green onions. SUPER!

  8. After the potato is peeled from the middle, salt, pepper to taste.
  9. Grease the inside with butter.
  10. Sprinkle with cheese, spread the tomatoes and sausages over the cheese. On top, break the egg.
  11. Salt the egg to taste, sprinkle with onions.
  12. Place in the oven until cooked through at 180 degrees.
